A Blend Born in the Roastery, Inspired by Nina Simone
Every coffee we create has a rhythm—a process, a flow, a feeling. And in our roastery, that rhythm is often set by the music playing in the background.
When we developed this blend, Nina Simone’s voice filled the space, her deep, commanding tones becoming part of the roasting process itself. Her music—raw, soulful, and timeless—felt like the perfect companion to this coffee. It was only natural that we named the blend “Nina” in her honor.
But over time, we realized that the name didn’t quite capture the essence of the coffee.
We wanted something that not only honored Nina Simone but also expressed the feeling her music gives you—that sense of renewal, confidence, and freedom.
So, we turned to the lyrics of one of her most iconic songs:
“It’s a new dawn, it’s a new day, it’s a new life for me… and I’m feeling good.”
That was it.
New Dawn.
A name that speaks to new beginnings, to the invigorating first sip of coffee in the morning, to the fresh start that a great cup can bring.

How to Brew the Perfect Cup
New Dawn Blend is versatile, working beautifully across different brewing methods:
- Espresso: Full-bodied, syrupy, spicey with well balanced acidity; shines as a black coffee but also pairs beautifully with milk (cappuccino, flat white, latte).
- French Press / Aeropress / Pour-over: Balanced, rich, and smooth; to enhance its acidity try brewing with cooler water, you can try as cool as 85°C .
- Moka Pot: Produces a heavy-bodied, syrupy coffee with lower acidity—ideal for those who love bold flavors.
